 Pasta
with Mushrooms
and Tomatoes
A wonderful combination of sautéed fresh garlic, mushrooms, ham,
Italian style stewed tomatoes, fresh parsley, and grated Parmesan
cheese served over macaroni or tubular noodles, this delicious pasta
dish is from Dick Favro, as featured in the Amado Territory Ranch
Inn Cookbook.

cloves garlic
4 pounds fresh mushrooms
1 ounce cooked ham
1 can Italian style stewed tomatoes
3 cups olive oil
2 Tablespoons chopped parsley
Salt & Pepper to taste
1 ounce Parmesan cheese, grated
1 pound macaroni or other short tubular pasta
Lightly crush garlic. Cut mushrooms into thin slices.
Cut ham into 8-inch wide slices. Chop the tomatoes saving all the
juices.
Combine oil and garlic and cook over medium-high heat. Sauté and
leave in the pan.
Add ham and cook lightly. Add tomatoes, fresh mushrooms, parsley,
and salt and pepper to taste.
Cover and cook over lowest possible heat for 15 minutes. Grate
cheese.
Cook macaroni in boiling salted water until it is just done, and
drain.
Add to sauce and stir over medium heat, for about 20 seconds.
Transfer to a serving bowl and mix in cheese. Serve immediately
