 Blueberry
Pudding
Berry-Licious! Too good for words! Served with a scoop of ice cream,
this recipe is a delightful combination of fresh blueberries and some
lemon juice, baked with a little flour, sugar and cinnamon.
Easy-to-make and easy-to-please, it is featured in the Amado Territory
Ranch Inn's Cookbook.
Put 1 quart
blueberries in a buttered 9-inch baking dish.
Sprinkle 1 Tbsp. lemon juice over berries.
Mix 1 cup each flour and sugar, and ¼ tsp. cinnamon.
Blend in ½ cup butter to make crumbs.
Spread mixture over berries.
Bake at 400 degrees for 40-45 minutes.
Serve with ice cream.
