Southwest
& Cactus Delight Seasonings
Seasoning is not merely about being hot and spicy. It is
about being perfectly balanced, with just the right amount
of herbs and spices in just the right combination to
complement the particular dish that it is used in. Here are
two, while being similar, they have just enough variations
between them to lend a uniquely different taste to the
specific meal or entrée being prepared. These recipes are
from Paul Smith, as featured in the Amado Territory Ranch
Inn Cookbook.
Southwest Delight
2 tablespoons paprika
1 tablespoon salt
1 tablespoon garlic granules
1 teaspoon black pepper
1 teaspoon cayenne pepper
1 teaspoon oregano
2 tablespoons chili powder
1 tablespoon cilantro
2 teaspoons cumin
1 teaspoon red chilies
Cactus Delight
1 teaspoon black pepper
1 teaspoon onion granules
1 teaspoon cayenne pepper
1 teaspoon white pepper
1 teaspoon lemon pepper
2 teaspoons cilantro
1 teaspoon cumin
1 teaspoon celery seed
1 teaspoon mustard
1 teaspoon red chilies
